Blueberry Basil Goat Cheese Panini Sandwich

4 slices of rustic bread (like ciabatta or sourdough)

100g goat cheese, softened

1 cup fresh blueberries

1 tablespoon fresh basil, finely chopped

1 tablespoon honey

2 tablespoons balsamic glaze

Olive oil for brushing

Salt and pepper to taste

In a small bowl, mix the softened goat cheese, chopped basil, honey, salt, and pepper until well combined. This will be your flavorful spread.

    Heat a grill pan or panini press over medium heat.

      Take two slices of rustic bread and spread the goat cheese mixture generously on one side of each slice.

        On top of the goat cheese, layer fresh blueberries evenly. Drizzle a little balsamic glaze over the blueberries for added sweetness and depth of flavor.

          Top each sandwich with the other slice of bread, goat cheese side facing inward.

            Brush the outside of each sandwich with olive oil to get a nice golden crust when grilling.

              Grill the sandwiches on the preheated pan or panini press for about 3-5 minutes on each side, until the bread is crispy and golden brown, and the goat cheese is slightly melty.

                Remove from the pan and let it rest for a minute before cutting in half.

                  Serve warm, drizzled with a bit more balsamic glaze and garnished with a few additional fresh basil leaves if desired.
