2 boneless, skinless chicken breasts

2 tablespoons chipotle ranch dressing (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or a Mexican blend)

½ cup corn (fresh, canned, or frozen)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

In a bowl, mix the chipotle ranch dressing, olive oil, garlic powder, cumin, smoked paprika, salt, and pepper to create a marinade.

    Place the chicken breasts in a resealable bag or shallow dish, and pour the marinade over the chicken. Ensure each piece is coated well. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard any leftover marinade.

        Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 75°C (165°F). Remove from the grill and let it rest for 5 minutes before slicing.

          While the chicken is resting, warm the tortillas on the grill for about 30 seconds on each side or until pliable.

            To assemble the burritos, start with a warmed tortilla. Add a scoop of rice in the center, followed by black beans, grilled chicken slices, shredded lettuce, diced tomatoes, corn, and cheese.

              Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to secure the filling inside. Repeat with the remaining tortillas and ingredients.

                Optional: Lightly grill the burritos on their seam side for 2-3 minutes to seal and create crispness.

                  Serve the burritos hot with lime wedges and garnished with fresh cilantro.
