Mediterranean Spinach Grilled Cheese

4 slices of whole grain bread

200g fresh spinach, washed and dried

150g feta cheese, crumbled

100g mozzarella cheese, shredded

1 small red onion, thinly sliced

1 small tomato, sliced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

Anleitungen
 

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced red onion and sauté until translucent, about 3-4 minutes.

    Add the fresh spinach to the skillet and cook until wilted, approximately 2-3 minutes. Season with salt, pepper, and oregano. Remove from heat and let cool slightly.

      In a bowl, combine the sautéed spinach and onion mixture with crumbled feta cheese and half of the shredded mozzarella. Mix well.

        Heat a non-stick skillet or griddle over medium heat and add another tablespoon of olive oil.

          On the outer side of each slice of bread, spread olive oil or butter. Place 2 slices of bread in the skillet, oiled side down.

            Evenly distribute the spinach and cheese mixture on top, then layer tomato slices and the remaining mozzarella before topping with the other two slices of bread, oiled side up.

              Grill until the bread is golden brown and crispy, about 3-4 minutes per side. Carefully flip halfway through cooking.

                Once both sides are crispy and the cheese has melted, remove from heat and let sit for 1-2 minutes before slicing.
