6 large eggs

1 cup milk

2 cups diced potatoes (fresh or frozen)

1 cup cooked breakfast sausage, crumbled

1 cup shredded cheddar cheese

1 cup chopped bell peppers (red and green)

1/2 cup diced onion

Salt and pepper to taste

1 tablespoon olive oil

Preparation of Ingredients: If using fresh potatoes, peel and dice them into small cubes. Dice the bell peppers and onion.
